There are few things quite so simple. Non complicated ... gather the sap and then boil it. Busy ... the sap only runs when the weather is just right. They gather, chop wood, and boil on natures comand and the result is this yummy natural sweet! There are still a few memebers of my family that perfer the stores maple syrup but it is not for us here in the North Country. I love the feel of the sugar shack, pancakes, sausage and friends. Here are just a couple of pics of the Ramsdell's making syrup - you can see our friend Brian in the background eating an egg (they boil them in the sap).

We are so deprived of good pure maple syrup here! It costs an arm and a leg because it's so hard to get! That's one thing to definitely miss about the North Country! Maybe we can make a trip to the Sugar Shack when we come next month. My boys LOVE pancakes!
